It’s been a while since I visited The Park Lane Hong Kong – my previous meal was a lovely, light dinner at Ebb & Flow (see my review here). The hotel, since its collaboration with Pullman Hotels and Resorts, has been undergoing refurbishments, and the establishment is now one of the hippest, most artsy spots in Causeway Bay!
SKYE is the hotel’s new restaurant and rooftop bar which just opened in September, and consists of an ultra chic indoor dining room, and an al fresco terrace which boasts an unobstructed view of the Victoria Harbour. Even though I come here during the week, Skye’s bar is packed with customers, who are no doubt here for the delicious cocktails as well as breathtaking view.
The kitchen, helmed by award-winning Chef Lee Adams, serves up an enticing selection of French contemporary dishes, and the cocktail list is equally impressive and inspiring, with your favourite cocktails prepared by bar mixologist Valerio Politano. An in-house DJ plays at the illuminated bar on the outdoor deck every night – no wonder this is such a popular haunt for corporate events and private parties!
For drinks, I decide to go for the Global B-Art-Ender ($130), a floral and refreshing cocktail with Becherovka, pineapple juice, elderflower, lemon juice and vanilla syrup – perfect for the evening on the terrace, while we watch the sunset!
We order some snacks to share. The Bourbon-glazed veal ribs with smoked corn salad ($180) is a job well done – the veal ribs are flavourful and gorgeously tender, and the smoked corn has a delightful crunch. The sautéed salt and pepper squid, dipped in yuzu mayonnaise, is the perfect bar snack!
